Corned Beef and Cabbage Recipe

I love St. Patrick’s Day! But corned beef and cabbage is my favorite meal any day- New Year’s Day, birthday day, the week or TWO before St. Patrick’s Day. It’s delicious and so easy to make.

What You Need

Corned beef, 3 lbs for 4 servings (But if you are related to me, plan on 1 lb per person. It’s THAT good.)

Cabbage, 1 head

Carrots, bag of baby carrots

Red potatoes, 10

Large stock pot or Dutch oven

Instructions for Corned Beef

  1. Place corned beef in pot or Dutch oven. Cover with water and add spice packet that came with the meat.
  2. Simmer for about 50 min per pound.
  3. Add carrots and potatoes and cook with meat until tender.
  4. Cut head of cabbage into chucks and cook for 15 minutes with meat and veggies.
  5. Remove meat and let sit for about 15 minutes.
  6. Cut meat against the grain and serve.

    Is this a sweet way of saying that you will be picking up the uncooked food at my house and cooking it this weekend???? Just a thought..

      Give me a pot large enough. I just can’t guarantee that we will be returning all of the food….
