I love St. Patrick’s Day! But corned beef and cabbage is my favorite meal any day- New Year’s Day, birthday day, the week or TWO before St. Patrick’s Day. It’s delicious and so easy to make.
What You Need
Corned beef, 3 lbs for 4 servings (But if you are related to me, plan on 1 lb per person. It’s THAT good.)
Cabbage, 1 head
Carrots, bag of baby carrots
Red potatoes, 10
Large stock pot or Dutch oven
Instructions for Corned Beef
- Place corned beef in pot or Dutch oven. Cover with water and add spice packet that came with the meat.
- Simmer for about 50 min per pound.
- Add carrots and potatoes and cook with meat until tender.
- Cut head of cabbage into chucks and cook for 15 minutes with meat and veggies.
- Remove meat and let sit for about 15 minutes.
- Cut meat against the grain and serve.
